Lemon Bars

Ingredients

Crust:

1 cup all purpose flour
1/3 cup Argo® or Kingsford's® Corn Starch
1/2 cup powdered sugar
1/2 cup margarine or butter, softened

 

Filling:

3/4 cup sugar
2 eggs
1 tablespoon Argo® or Kingsford's® Corn Starch
1/4 teaspoon baking powder
3 tablespoons lemon juice

Directions

  1. PREHEAT oven to 350°F. In a small bowl, combine crust ingredients until well mixed and crumbly in small bowl. Press into bottom of 8 x 8-inch square pan. Bake for 15 to 20 minutes or until edges are lightly browned.
  2. COMBINE all filling ingredients in small mixing bowl. Mix with electric mixer or wire whisk until well blended.
  3. POUR filling over hot crust. Continue baking for 18 to 20 minutes or until filling is set. Cool. Sprinkle with powdered sugar.
