Caramelized Pear and Pudding Pie

Ingredients

Pudding Pie Ingredients:

3-1/4 cups whole milk, divided
1/2 cup sugar
1/4 cup plus 1 tablespoon Argo® Corn Starch
3 egg yolks
2 teaspoons vanilla extract
2 teaspoons unsalted butter
1 prepared cookie crumb crust

Caramelized Pear Ingredients:

4 bosc pears
1/4 cup (1/2 stick) unsalted butter
1/2 cup sugar
1/2 teaspoon ground cinnamon

Directions

Pudding Pie:

  1. Place 2-3/4 cups milk and salt in medium saucepan. Sprinkle sugar over milk but do not stir. Heat over medium high temperature on top of range.
  2. Combine cornstarch, remaining 1/2 cup milk and egg yolks in a small bowl, while milk mixture is heating. Mix well.
  3. Remove milk from heat when it comes to a roiling boil and stir in cornstarch mixture to thicken. Return to heat and cook about 1 minute longer.
  4. Remove from heat, stir in vanilla and butter. Let cool 2-3 minutes before pouring into prepared pie shell. Allow for further cooling, then refrigerate while making caramelized pear topping


Caramelized Pears:

  1. Peel, halve and core pears. Cut pear halves into 3 equal wedges.
  2. Heat butter in well-seasoned cast iron skillet over moderate heat until foam subsides, then stir in SUGAR IN THE RAW®. Arrange pear wedges cut sides up.
  3. Sprinkle pears with cinnamon and heat undisturbed for about 10 minutes until sugar caramelizes (turns a deep golden color). Let pears cool.
  4. Place cooled pear wedges on top of chilled pudding pie, drizzle caramel sauce on top. Chill and serve.
