Combine 1 cup flour, undissolved yeast and salt in a large mixer bowl. Heat water and olive oil until very warm (120° F to 130°F). Gradually add to flour mixture mixing for 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1 cup flour and continue mixing for 2 minutes. Stir in enough remaining flour to make a soft dough; mix until dough forms a ball and does not stick to sides of bowl, 3- 5 minutes. Preheat oven to 400° F.
Roll dough into one 16-inch or two 12-inch circles; place on a baking sheet or pizza pan sprayed with cooking spray. Form a standing rim by pinching the outer edge of dough. Add salt and pepper to eggs and stir well. Pour egg mixture onto pizza dough. Sprinkle with shredded cheese and bacon, ham or sausage. Carefully place in oven and bake for 20 minutes or until eggs are set. Serve immediately.
Serving Suggestion:
Add ½ cup of any of the following veggies for added flavor and nutrition: diced bell peppers, sliced mushrooms, chopped tomatoes, minced green onion or chopped fresh spinach.
