Pancakes:
Combine flour, salt, baking powder and pumpkin pie spice in a bowl. In a large bowl, whisk together pumpkin, eggs, milk, corn syrup, butter and vanilla until smooth. Add flour mixture and stir until just moistened.
Heat a lightly oiled griddle over MEDIUM heat. Working in batches, scoop batter onto griddle and cook pancakes on both sides until golden brown.
Pour apple filling into a small saucepan and cook over MEDIUM heat until heated through. Serve pancakes with warm apple filling
